BOURBON CHERRY CHOCOLATE CHIP ICE CREAM
3 cups of cherries
2 tbsp bourbon
2 tbsp brown sugar
2 cups heavy cream
1 cup condensed milk
2 tsp vanilla
1 cup mini chocolate chips (we used larger chocolate chips so we only used 1/2 to 3/4 cup)
1. Pit and soak the cherries in the bourbon and brown sugar in a bowl for 1 hour.
2. In a separate bowl combine the heavy cream, condensed milk and vanilla in the mixer until it becomes firm (to the point of when you scoop it out and turn the spoon over and it won't plop down).
3. Fold in the bourbon and brown sugar soaked cherries and chocolate chips into the cream, milk, vanilla mixture with wooden spoon or spatula (do not use the mixer after this).
4. Place the mixture into a metal loaf pan for 6 hours
5. ENJOY! ;)
*We made this with all organic ingredients (minus the bourbon)
*We didn't use an ice cream maker, we used our Kitchen Aid mixer
*We used larger chocolate chips so we only used 1/2 to 3/4 cup
*We used a metal bread loaf pan to freeze the ice cream
